For the PathFinder challenge, Gatito Lindo has prepared a feast of Catalan and Greek flavors to honor his companion, Salvador Delahada, and his cousin and friend, Maggie Harker.

APPETIZERS

Esqueixada
salad of cod, tomato, white onion, green pepper, and black olives
dressed with olive oil and sea salt

Potato Bombas
breaded and fried balls of mashed potato filled with vegan ground beef and sausage, onion, and tomato
served with smoky and spicy bravas sauce

Burrata with Peaches and Tomatoes
creamy burrata dressed with honey, olive oil, and basil, with grilled peaches and confit tomatoes
served with grilled ciabatta






MAIN DISHES

Catalan Lamb Skewers
juicy grilled chunks of lamb marinated in olive oil, garlic, paprika, and cumin
served with a spicy pepper sauce and cucumber-yogurt salad

Greek-Style Cod
seared and baked cod filets coated in coriander, cumin, and paprika
served with a lemon-garlic butter sauce and fresh parsley

Vegan Pollo a la Catalana
vegan chicken simmered in a sauce of onion, tomato, dried fruits, pine nuts, and cognac
served with white rice

Escalivada
roasted sweet peppers, eggplant, and onion dressed with olive oil and sea salt

Greek Lemon Potatoes
golden potatoes simmered in lemon-garlic broth, then roasted until crispy

Greek Salad
salad of tomato, cucumber, green pepper, onion, Kalamata olives, and feta
dressed in olive oil, red wine vinegar, and fresh oregano

Catalan-Style Greens
spinach, chard, and beet greens sautéed with garlic, pine nuts, and sultanas

Pan Con Tomate
grilled ciabatta rubbed with garlic and topped with grated tomato and flaky sea salt






DESSERTS

Spanish Magdalenas
traditional Spanish cupcakes made with lemon zest and olive oil

Old Fashioned Iced Brownies
chocolate-chunk brownies with thick, fudgy icing and rose gold sugar pearls and sprinkles
served with a scoop of vanilla bean ice cream, if desired

fresh grapes, berries, peaches, nectarines, oranges, apples, pears, melon, and figs

Death by Morning
absinthe, branca menta, coffee liqueur, freshly brewed espresso, angostura bitters,
demerara sugar, sea salt, and a twist of orange, garnished with a mint sprig

dark chocolate, your milk of choice, vanilla syrup, and a little freshly brewed espresso,
garnished with chocolate sprinkles

Amidst delicious food, fantastic drink, and some hot fashion, Mairead and Salvador met to see who would take PathFinder home tonight. It took two matches but they were fiercely fought! And when the dust settled, Salvador Delahada retains his right to the opal!
